The traditional Thanksgiving meal centers around the turkey, but if you shift the focus to the deep flavors of fall, you can still create a hearty meal that’s free from animal products. Building new Thanksgiving traditions can take some time and effort, but is Thanksgiving really about turkey? Let’s make it a holiday that’s focused on good friends, our family, and celebrating gratitude.
When I’m planning a holiday meal, I try to choose dishes that I can prep in the days leading up to the holiday, so there’s less cooking to do day-of. That way I can spend the day enjoying friends and family instead of bustling too much around the kitchen. Where possible, I will include details on how you can prep these vegan Thanksgiving recipes in advance, so your Thanksgiving day is a little bit less hectic.

Starters and Side Dishes
For me Thanksgiving supper has always been about the side dishes, so I wanted to give you plenty of options to mix and match. Pick a few favorites!
- Ginger Vanilla Pear Sauce – You can prepare this a day or two ahead and either serve cold or reheat just before supper.
- Roasted Butternut Squash with Mushrooms and Scallions – Chop the veggies and put them into an oven safe pan with a lid the day before Thanksgiving. On the day of, pull the pan out an hour or so before you plan to start baking, so everything has a chance to get to room temperature. You don’t want to stick cold ceramic into a hot oven – it might break!
- Green Beans with Mushroom and Shallots – This is a quick dish best prepared day-of. You can cook the green beans in advance, if you want.
- Corn Bread – You can make this delicious vegan Thanksgiving recipe the day before.
- Butternut Squash Soup with Pan-Fried Collards – Cook this cozy soup a couple of days before Thanksgiving and just reheat on the stove top.
- Mashed Potatoes – This is another quick Thanksgiving recipe that you’re best off preparing on the big day.
- Savory Stuffed Mushrooms – Stuff these a day ahead of time. You can serve them cold or bake them!
Just like with the sides, I wanted you to have a few main dish options to choose from, depending on your and your family’s taste. Choose your favorite and scale it up to feed everyone!
- Nutty Curry-Stuffed Miniature Squash – Make the stuffing and prepare the squash a day ahead.
- Mushroom and Spinach Galette – You can make this the day before and just bake them on Thanksgiving day.
- Shepherd’s Pie – This vegan Thanksgiving recipe serves four to six people, and you can make it a day ahead and just pop it into the oven on Thanksgiving day.
I know, sugary desserts are a sometimes food, but I think that Thanksgiving certainly qualifies as one of those sometimes, don’t you?

- Miniature No-Bake Cheesecake – These need to set up in the fridge for a few hours, so making them the evening before Thanksgiving is ideal.
